Tatsoi mustard grows into a flat rosette formed by spoon-shaped, shiny dark-green leaves with pale stalks and veins. When grown in warmer weather, the rosettes tend to be more upright.
The leaves are harvested and used the same as spinach leaves, as salad greens, or lightly cooked. Stir-frying or saut�ing in your favorite light oil is an excellent choice. Like pak choi, it's also great in soups. The leaves have a mild, but distinctive mustard flavor.
Plants are cold-hardy and in the south it's best grown before temperatures reach 80F. We grow it from fall to early spring.
